१ बटाटा
तळण्यासाठी तेल
१ कांदा
१ टोमॅटो
गरम मसाला
फरसाण
पोहे कुरमुर्याचा चिवडा
कोथिंबीर
लिंबू
ब्रेडचे स्लाईस
कट बनवण्यासाठी साहित्य :३-४ लसूण पाकळ्या
१ इंच आले
२-३ मिरी
१ लहान काडी दालचिनी
२-३ लवंगा
१ तमालपत्र
१ चमचा जिरेपूड
१ चमचा धनेपूड
अर्धी वाटी खवलेला ओला नारळ
१ मध्यम कांदा
२ मध्यम टोमॅटो
४-५ लहान चमचे लाल तिखट
फोडणीसाठी तेल
आमसुल किंवा चिंच
मीठ

कृती:
१) मटकी १०-१२ तास कोमट पाण्यात भिजत घालावे. त्यात जर कडक मटकी आणि खडे असतील तर ते काढून टाकावे. सुती कपड्यात बांधून मोड काढावेत.
२) मटकीला मोड आले कि कट बनवून घ्यावा. त्याचवेळी मटकी कूकरमध्ये २ शिट्ट्या करून शिजवून घ्यावी.
३) कट बनवण्यासाठी लसूण पाकळ्या, आले, मिर्या, दालचिनी, लवंगा, तमालपत्र, जिरेपूड,धनेपूड मिक्सरवर जेवढे बारीक होईल तेवढे बारीक करून घ्यावे.
४) कढईत ४-५ चमचे तेल गरम करावे. त्यात मिक्सरमधून काढलेला मसाला घालून खमंग परतावा. मसाल्याचा छान गंध सुटला कि त्यात १ कांद्याच्या आणि २ टोमॅटोच्या मोठ्या फोडी घालून परतत रहावे. सर्वात शेवटी खवलेला नारळ घालून परतावा. मिश्रणाला तेल सुटले आणि कांदा शिजला कि गॅस बंद करून बाजूला काढून थंड करावे. मिश्रण थंड झाले कि त्यात १ भांडे पाणी घालून मिक्सरवर पातळ पेस्ट करून घ्यावी.
५) नंतर मटकीची उसळ बनवून घ्यावी. पातेल्यात २-३ चमचे तेल गरम करावे. त्यात मोहोरी, हिंग, हळद घालून शिजवलेली मटकी घालावी. थोडे पाणी घालावे, १-२ चमचा गरम मसाला घालावा. बारीक गॅसवर उसळ उकळत असताना दुसर्या गॅसवर लहान कढईत अगदी थोडे बटाट्याचे तुकडे तळण्यापुरते तेल गरम करावे (साधारण अर्धी वाटी). (बटाटे तळल्यावर ७-८ चमचे तेल उरले कि त्यातच कट बनवता येतो.)
६) १ बटाटा सोलून त्याचे लहान चौकोनी तुकडे करावे, आणि मध्यम आचेवर बटाटे व्यवस्थित तळून घ्यावे, कच्चे राहू देऊ नये. तळलेले बटाट्याचे तुकडे उसळीत टाकावेत. चवीपुरते मिठ घालावे.
७) लहान कढई खालचा गॅस बारीक करून उरलेल्या तेलात हळद, हिंग, ४-५ चमचे लाल तिखट घालून तयार केलेली मसाल्याची पातळ पेस्ट घालावी. मीठ घालावे. आंबटपणासाठी २-३ आमसुल किंवा थोडा चिंचेचा कोळ घालावा. आवश्यकतेनुसार पाणी घालून १ उकळी काढावी.
८) उसळ आणि कट तयार झाला कि कांदा आणि टोमॅटो बारीक चिरून घ्यावा.
९) नंतर डिशमध्ये १ डाव उसळ घालावी. त्यावर १ पळी कट घालावा. त्यावर चिवडा, फरसाण, कांदा, टोमॅटो घालावे. लिंबू पिळून तयार मिसळ स्लाईस ब्रेडबरोबर खावी.

टीप:
१) ओला नारळ उपलब्ध नसेल किसलेला सुका नारळसुद्धा वापरू शकतो.
२) ज्यांना तळलेले बटाटे नको असतील त्यांनी शिजवलेले बटाटे घातले तरी चालते. तळलेले बटाटे उसळीत फुटत नाहीत, शिजलेले बटाटे मिसळीत फुटून मिसळ घट्ट होऊ शकते.

  33. I tried so many time to cook kolhapuri misal or Puneri misal but never ever I can, this recipe is also cant make the perfect misal I am shure. I dont now Vaidehi where are u from, I am from Pune here misal of Bedekar(narayan peth), Shree UpharGrah (Sadashiv Peth), Vateshwar Bhawan (Bhawani Peth), Shrikrishna Bhawan (Tulshi Bag)and many more are so tasty of course there is some secret in masal preparation.I only came to 50% trying for last 2-3 years.

    Had made the misal today!Sunday Special! and it turned out to be so good! Perfect treat! both, for the eyes and the taste buds! I have heard of Bedekar misal and Kata-Kirrrrrrrr at Pune, never tasted though. I can bet, it cant be any better than this! All of them over-ate at my place today and ofcourse with the praises...maza pot ter kautuk aikunach bharla!

    Misalimadhye tomato asto ki nahi yavishayi vegvegali mate ahet. Pohyacha chivadahi misalit uttam lagto yabaddal shankach nahi. Tasech tomato ghatalyas chhan chavahi yete.

      pratikriyebabbdal dhanyavad. Tari yenyasathi tel thode jast vaparave. Tasech tel garam zale ki tyat thodishi (1/4 chamacha) sakhar ghalavi. Yamule suddha telacha tavang yayla madat hote.
